Not on the Cape

Beans_Rice_Chicken_Guac_IMG_8825We’re not on the Cape as we’d planned to be this weekend. That’s a bummer. Dinner was far from a Cape meal, but it was fine.

I really mixed it up (insert sarcasm emoticon here) by making my favorite bean recipe with pintos instead of black beans. I think I prefer the black bean version, but it’s also entirely possible that I left out some essential ingredient, thanks to an overwhelmed brain.

Rose and I put together a decent guacamole, which we ate half of in the process of making. There was rice, of course, and weekday chicken for them, and salad for me.

Have I ever mentioned that I don’t like salsa from a jar (or can for that matter)? It has a certain icky flavor to it that I can’t tolerate, I’m not sure what it is. The one and only exception to this rule (that I know of) is Herdez Salsa Casera.

Herdez comes in a can or a jar, both versions are good, and it doesn’t have that weird jarred salsa flavor. I’m not saying it’s the same as when you make it from scratch yourself. But it’s a good thing to have in your pantry, and great in a pinch.

On the messed-up family front, Shane is feeling slightly better thanks to an acupuncturist we found, who makes house calls.

Add cucumber salad

Friends, family, food

FriendsFamilyFood_IMG_8817People took care of us today. First, my friend Britta and her adorable, sweet, son came by with dinner and a giant pregnancy pillow. The pillow was actually for Shane, we thought it might help position him in bed so that he was not quite so uncomfortable.

Britta doesn’t exactly have a ton of free time on her hands, which made this colossal effort on her part even more meaningful to me. She is a mom of four, up from two this past May (you can read all about it here).

She brought us the most succulent vegetable lasagne, savory sausage pie and really cute cookies (which we’ll eat tomorrow) from the Riviera Bakehouse in Ardsley. And then, she took Rosey out to dinner, allowing me time to put my feet up, and then empty and refill the dishwasher.

Later, my uncle Pete stopped by with the contents of my CSA box, and offers of more food. Even though I’m off of bed rest, the CSA box was going to be a big effort tonight and it was such a relief to have it delivered.

I am so grateful for, and humbled by, the generosity of our friends and family. Thank you.

 

Sausage and tomato sauce

Pasta&Salad_IMG_8814I was hoping to to go to the coffee shop for dinner, it being Wednesday and all. But Rose didn’t want to go, because, you know, she didn’t like her shoes.

The wonderful news is that I’m officially done with partial bed rest. I still have this discomfort that builds during the day, making it hard to be on my feet right when I  really need to be, around dinner time.

Fortunately, I had made Shane a ‘proper’ lunch of pasta with sweet Italian sausage and tomato sauce for lunch, and there was a lot of sauce left over. I made a fresh batch of pasta, warmed the sauce and threw together a simple salad.

For my version, I pulled the sausages out and replaced them with bufala mozzarella chunks. Rose and Shane devoured the sausage version.

Do you know that sausage-tomato sauce is the easiest thing in the world to make? It’s also a great make-ahead or make while you’re doing something else dish. Here’s what I like to do:

• Easy Sweet Italian Sausage and Tomato Sauce •

olive oil
1 yellow onion
3-5 sweet Italian sausages
1 large can San Marzano tomatoes
Italian seasoning
1-2 tablespoons butter
salt and pepper to taste
pasta
cheese for sprinkling 

Pour a decent amount of olive oil (about 3 tablespoons) into a large skillet, add a thickly sliced yellow onion and sauté until soft and translucent. Add sausages, chopped into 1” chunks, and cook for another 5-10 minutes. Add some Italian seasoning, maybe a teaspoon or two, (I like Penzey’s Pasta Sprinkle), a pinch of red pepper flakes (optional) and a can of whole, peeled San Marzano tomatoes. Mush the tomatoes a bit to break them up.

Add a tablespoon or two of butter while the sauce is cooking. When the sausages are cooked through, about 20-30 minutes, season with salt and pepper. Serve over penne or rigatoni with parmesan or pecorino for sprinkling. Pluck out sausages and give to someone else, if you’re a flexible vegetarian. Have a simple green salad on the side.

 

 

A polite meal

Polite_IMG_8811My dad would have some potentially offensive names for this meal. Despite the fact that I reluctantly list foot-in-mouth as one of my specialties, I won’t use those names here. Scratch that, Dad says it looks good, especially knowing there is sausage involved.

Instead, let’s call it a polite meal, and just what the doctor ordered. It required very little time spent on my feet, was quick to prepare, and couldn’t have been easier.

Cherry tomatoes, halved, with chunks of bufala mozzarella, olive oil and salt. Sugar snap peas, a baguette, and a couple of sweet Italian sausage for Rose and Shane. Done!

Chicken meatloaf saves the day

ChickenMeatloaf_IMG_8809Back when Shane first had his surgery, a friend made us two meatloaves. I served the first and then we had that crazy heat wave and I couldn’t bear to turn on the stove. So I froze the second.

How thrilled was I when I saw it in the freezer yesterday morning? Thanks so much Julie.

We had it with zucchini sautéed in butter with lemon zest. And yes, I had some. The other night I found myself reaching for a sausage, and realized that the time may have come for me to add a teeny bit of poultry to my pregnancy diet.

Shane was not well enough to eat.

 

A million times a million thanks

This post is not about dinner. It’s just a big old thank you to my family.

We were at the Cape Cod ER again today, this time for Shane’s back, which is, essentially, seriously fucked up. Shane and I are now both completely useless (until I get the all-clear—fingers crossed—from my OB tomorrow).

Everyone was so helpful and supportive and wonderful. Driving us around, sitting in the hospital (again), comforting me, cleaning up the house and fridge (which we left a total mess), changing kitty litter, entertaining and remembering to feed Rose, driving relatives to the airport, making beds, packing snacks… The list goes on.

Thank you to my whole family, but today extra thanks to my sister, Anna.

After running 6 miles this morning, Anna packed up our car, because we can’t lift anything, and drove us all the way home from Cape Cod.

After six hours of driving, she then carried all of our luggage, and our two cats upstairs (that’s 5 flights, folks), and drove around the neighborhood until she found a Thursday spot for our car, so that we don’t have to move it for several days.

How awesome is Anna? Infinitely awesome. Thank you a million times a million, sis.

 

A grand birthday

Tonight we celebrated the birthdays of my mom, dad and mother-in-law, Helen. They were all born in the same week, back in the year of 19(ahem).

Anna & Jenya had the brilliant idea of making a simple meal for our group of 18-ish (it’s hard to get the count exactly right). We wondered what ever happened to simple, pasta-based Cape meals, where we only have three things, and why we don’t have them more often*.

On the menu was Pasta with Fresh Tomato Sauce and Tzatziki, sweet and hot Italian sausages on the grill, and a delicious salad by Rita, with Rita’s Dressing, of course.

Dinner was followed by a cake that my mom made, possibly with a little help from Rose, with “Us” written on the top in berries. “Us,” as in, happy birthday to us, not as in US(A).

It was the perfect end to a week at the Cape, we’re so sad to see everyone go, and so bummed that Shane and I were in such shitty shape for most of it. Thanks, thanks, and thanks again to all the friends and family who put up with us, picked up our slack, dried our tears, and then some. Until next year…

Risotto, Chicken, Fish

VeggieRisotto_IMG_8752My in-laws engineered tonight’s meal. I feel bad because it’s their vacation, but with me on semi bed-rest (or whatever you call it) and Shane totally out of commission due to a bad back, which is due to his bum shoulder, we’re kind of useless as host and hostess. All I can say is thank goodness for family.

I was so bummed out about our collective condition, that I didn’t do a good job with the photos, I forgot the chicken. But, dinner was wonderful. We had an absolutely chock full of vegetables risotto, lemony black cod, which my brother-in-law and nephew caught, and a really good looking chicken dish by my sister-in-law Trish.

Did I say thank goodness for family? And happy birthday to my dad today. We love you pop.

The Mezza Luna

MezzaLuna_IMG_8730We went to the Mezza Luna restaurant tonight. It’s always great fun. This time we got to sit in the Venetian Room, my mom’s dream come true. Rose said her kid-sized spaghetti with one giant meatball was the best thing she’s ever eaten.

Also, Happy 4th Anniversary to Jenya & Andre, who probably would have loved to join us, if they weren’t doing something much more romantic and luxurious.
