Veggie sides

While my family ate the leftover turkey chili from last week, I had a (not wholly round) meal of delicious vegetable sides. If you’ve been here recently, you know my new favorite thing to do with broccoli is to roast it. Tonight I did just that and then sprinkled it with parmesan cheese.

I’m very excited about the sweet potatoes tonight. I roasted and then tossed them with fresh thyme, and topped with goat cheese. The recipe is below.

• Roasted Sweet Potatoes with Goat Cheese & Fresh Thyme •
2lbs sweet potatoes, peeled and cut into 3/4″ cubes
1/4 cup olive oil
1/2 tsp kosher salt
2 oz chevre
1 tsp chopped fresh thyme leaves

Heat oven to 350. Peel and chop potatoes and toss with olive oil and salt. Roast potatoes on a rimmed baking sheet until soft and browned in places, about 30 minutes. Let cool slightly, then toss with fresh thyme leaves. Season to taste with salt and pepper. Serve topped with crumbled chevre. 

Mustard crusted tofu

I’ve missed posting about dinner, so here we go again*. Tonight I made an almost dairy-free meal (butter excepted), which is highly unusual for me. I made it because Shane has been feeling sick, and seems to think that not eating dairy will help him to feel better.

The Mustard Crusted Tofu was a little bland on it’s own, I thought. But paired with the extra sauce from Salad Turnips with Miso, it was excellent. I skipped the greens in the tofu dish since we were already having turnip greens. Rice pulled everything together.

*It’s clear that the aftermath of Sandy will be with us for a long time. My hope is to continue to help out as best I can, even while my life is more or less back to normal.

Finding a home for our supplies

We raced back to New York with our Sandy relief supplies, only to find that the truck was already full and not taking anything but diapers and water. I put some feelers out and thanks to our wonderful community, warm coats and toys are now headed to the Rockaways. Later this morning blankets, candles and more toys will be safely on their way to Red Hook. We’re glad to be able to help and so grateful for our wonderful community.

Easy Turkey Chili

This 5 Ingredient Turkey Chili from The Kitchn was remarkably quick and easy to make. As recommended in some of the comments, I swapped out part of the tomato with salsa. To keep it kid-friendly I used about 3 parts tomato to 1 part salsa. My family loved it.

Our CSA truck was delayed getting to us because of storm-related gridlock and bok choi was the only veggie we had left. I sauteed it with ginger and finished it with miso butter.

A meal for them

Rose practically cried last night when I served yet another meat-free meal. We had to tell her that there was no meat available due to the storm just to calm her down, which was sort-of true. Shane kept a stiff upper lip, but I know deep down he’d had enough of the meatless dinners too. So tonight, I cooked a meal just for them. I think they appreciated it. And I had an egg.

 

Post Sandy

I expected that we’d be out of power and desperately trying to munch our way through the fridge before everything went bad. We got off easy, up here on a hill in the borough of Queens, but we still need to eat our leftovers.

Our leftover dish was Friday’s Butternut Squash & Sage Lasagne. We also had farro with chickpeas, basil and pecorino. I like to cook my farro al dente and then throw in whatever fresh herbs I have on hand, a good bit of olive oil, dried fruits, beans and/or cheese. I used the gorgeous beets from my csa box to make a beet and gorgonzola cheese salad that also uses the greens (so that I don’t have to feel guilty).

Stormy birthday

I have to admit it’s been a rather delightful day in spite of Sandy the storm. I got a bonus day home with my family, slept in, was woken up with cuddles, coffee and gifts. And then Shane spent the entire day in the kitchen preparing my birthday meal and cake. To top it all off, we still have power (knock wood).

One of Shane’s signature dishes is pizza from scratch, dough and all. I couldn’t even begin to tell you how he makes it, but it’s delicious. I added some crispy kale to the mix since, Shane (admittedly) thought that pizza counted as a vegetable.

For dessert he made a delicious Mocha Roulade birthday cake from the Martha Stewart Baking Handbook. The cake was so long that we didn’t have a platter for it. And so dark and rich that I couldn’t even finish my slice, which is rare for me when it comes to dessert.
